Our System
While we do not brag nor claim we have the best steaks in town, it’s just a matter of controlling the variables from sourcing the best Australian meat to controlling the raw material’s supply chain, minimizing bacterial contact and cooking it with the right temperature.
As a franchisor, we have embedded a system to control the variables as mentioned. This helps us to preserve the tenderness, succulent taste and juiciness of the steak to you.
The Art
If you are one of our customers in Kajang who love to bring back our beef but find it troublesome to get the same result as we do, we would like to share our method of cooking steaks on grill / charcoal grill;
- Adopt the 5-4-2-2 principle.
- High heat for 5 minutes (one side), 4 minutes (the other side)
- Medium heat for 2 minutes (one side), 2 minutes (the other side)
Steaks are easy to cook.
The mistake people make is to cook the steaks well done. When you do this, the juiciness and tenderness of the meat is significantly reduced. You will want to ensure it is cooked between medium to medium well.
The Science
Remember “Gerakan Brown”? It is similar to cooking. If you put on high heat on both sides of the steak, you will likely burn it because the particles are moving too fast while you forget, the inside particles may not be moving at all.
Keeping a medium heat helps to transfer the heat into the center of the meat to ensure it is cooked evenly.
A temperature chart helps as a guide to select the best temperature during cooking;
- 52 degrees celcius – Rare
- 60 degrees celcius – Medium
- 65 degrees celcius – Medium Well
- 71 degrees celcius & above – Well Done
